That extra rupee over a even sum is a form of a blessing. The "shagun ka rupaya" or the extra rupee in gifts of 500, 1000 etc. rupees signifies that your income should not stop. See how...

0 is also thought as the end. So giving 500 or any even sum like that will symbolise bad luck. But, 1 extra rupee signifies a beginning. It is basically a blessing: let the money not stop with what the person gifts but increase. '0' signifies the end while '1' signifies the beginning.

This post was short but I was wondering about this since days. Hope you like it...
